José Monje

Owner and Head Waiter of Via Veneto. Every single detail of the restaurant’s personality bears his touch of professionalism, rigour, respect for his job and the best customer service.


After working for several restaurants, José Monje began as a waiter assistant in the newly opened Via Veneto. It was the year 1967, a time when the avant-garde Gauche Divine found its place in the restaurant. Soon after that, José Monje became maître, then manager and finally owner of the most cosmopolitan restaurant of Barcelona par excellence.

With great will and skill, José Monje has been able to position Via Veneto at the top of the restaurant industry in this country, while achieving an awarded professional career and widespread recognition as a room waiter year after year.
Presently, José Monje is still revising personally the optimal quality of every product entering the kitchen, and is also in charge of customer service on a daily basis. For him, today’s challenges, as well as those of the future, are more exciting than ever.

Pedro Monje

Continuing his father’s task at the forefront of Via Veneto, Pedro Monje (who received the best head waiter 2013 award) has settled the restaurant into modernity while keeping an increasingly admired respect for tradition.


As a young boy, Pedro Monje showed a strong interest in the restaurant kitchen during his school holidays. With an educational background in ESADE business school, he has escalated all hierarchical levels that exist in a restaurant. He has worked in world-renowned kitchens (Pic and La Pyramide, in France), is a certified sommelier and has a strong passion for wine culture.

Pedro Monje is currently the manager of Via Veneto restaurant, combining his management tasks with day-to-day customer service. Moreover, he actively participates in the most important gastronomic forums and restaurant associations of the country.


Sergio Humada

Sergio Humada is the best bet for the Michelin Star awarded cuisine of Via Veneto.


This young chef, son of Juan Mari Humada, one of the greatest names in the New Basque Cuisine, received his training in the best kitchens of the country (El Celler de Can Roca, Mugaritz, Arzak, Las Rejas…). When he was 20 years old he was already managing his own restaurant in San Sebastian, and he was finalist in the Best Revelation restaurant Award at Madrid Fusion, a position which he has achieved twice. He made firm and steady steps in his career and he became head cook and restaurant manager in the Alma hotel chain, before he finally began working as a chef in Via Veneto.
He is a professional who loves daily cooking, he is “a man of stoves”, his style is based on an solid cuisine, of recognizable and intense flavours, but with modern constructions and techniques

Via Veneto opened its doors in 1967, and since then, a large number of personalities in the fields of politics, culture and society have visited our restaurant.


Among others, we proudly remember the visits of high-level politicians such as Richard Nixon, movie stars like Woody Allen, Christopher Lee and Rock Hudson; writers such as Gabriel García-Marquez or Mario Vargas Llosa; painters like Salvador Dalí and Miró; musicians such as Xavier Cugat and leading sports stars like Pelé.

Via Veneto was the stage of amazing surrealist anecdotes featured by this genius painter.


We would like to pay a humble homage to Salvador Dalí, who honoured us with his friendship and presence for many years.



Dalí always sat at the same table in the restaurant, where he used to do surrealistic “performances” such as ordering the owner Mr. Monje uncooked sausages only to hang them to his female companions as if they were pearl necklaces.
